Bologna is definitely one of the most well-known Italian cities for its gastronomic cuisine. Here you can taste unique and exquisite delicacies. The Bolognese cuisine is exceptional, you can truly find extraordinary food. It is considered the capital of good food all over the world.

Today, the culinary tradition is a mix between past and present, between tradition and innovation. You can find traditional homemade fresh pasta, a recipe that has been passed down from generation to generation for centuries, and on the other hand, you can also find creative street food.
What to eat
While walking around the city center you will surely come across trattorias and taverns, here you can find typical dishes such as tagliatelle al ragù or the famous tagliere di salumi.

Another specialty is gramigna alla salsiccia, a type of pasta that is very typical of this area and it is served with a delicious sausage sauce.

Last but not least, one of the most important dishes are tortellini, which are a fresh pasta filled with pork loin, eggs, mortadella, ham, Parmigiano Reggiano, and nutmeg. If you visit the city during the winter, you have to try the tortellini in brodo, which are eaten in a meat broth ideal for cold weather. You can’t go home without trying them! With sausage sauce, broth, in any way you want them… they are not just great, they are a masterpiece!

If you don’t have much time to sit and relax at a restaurant, you can grab some street food, as a piadina or a sandwich with mortadella. A sandwich filled with authentic Mortadella Bologna. As we call it in Italy, un capolavoro (a work of art)! After trying it you will remain speechless. I’ve never tried a better panino with mortadella anywhere else.
